Caramelized Gooseberry Mango Salad

Gooseberries are rich in antioxidants and Vitamin C and doesn’t lose its nutritional potency when cooked.

INGREDIENTS

1 CUP WATER

15 CAPE GOOSEBERRIES (Sliced in halves)

SALT TO TASTE

2 TABLESPOONS SUGAR

1/2 TEASPOON GINGER

1/4 TEASPOON PAPRIKA

STEP 1

In sauce pan on low heat

Add water and salt

Bring to a boil

Combine diced mango, gooseberries, paprika, ginger and sugar

STEP 2

Stir occasionally and remove when caramelized

STEP 3

Pour over sliced mango and serve
